Delicious (and healthy!) peach crumble recipe

Prep time: 15 min. Cook time: 40 minutes. Servings: 8.

Ingredients

Filling:

  • 5-6 thinly sliced peaches
  • 3 tablespoons agave syrup (or maple syrup or honey)
  • 1 teaspoon vanilla extract
  • 1/2 lemon, squeezed
  • 3 tablespoons cornstarch
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Coconut oil to coat skillet

Crumble:

  • 1/3 cup pecans
  • 1/3 cup walnuts
  • 1/4 cup pumpkin seeds
  • 2-3 tablespoons coconut flakes
  • 3 tablespoons ground flax seed
  • 1/3 cup almond flour
  • 2 tablespoons cornstarch
  • 1/2 teaspoon cinnamon
  • Pinch sea salt
  • 1/4 cup coconut oil, melted
  • 2 tablespoons agave syrup (or maple syrup or honey)
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350 degrees.
  2. Coat an 8- or 9-inch cast iron skillet or baking dish with coconut oil.
  3. Mix sliced peaches in a bowl with the other filling ingredients.
  4. Pour filling in dish or skillet.
  5. In a food processor, pulse together nuts, pumpkin seeds, and coconut flakes. Add ground flax seed, almond flour, cornstarch, cinnamon, sea salt, coconut oil, agave syrup, and vanilla extract. Pulse again — only enough to have it bind together in crumbs.
  6. Sprinkle crumble over the peach filling.
  7. Bake for 40 minutes or until bubbling and browned on top.
  8. Let cool for 5 to 10 minutes before serving.
